Born of the Deccan. Built for now.

Some flavours cannot be rushed.

NIZORO began with a simple idea: some flavours cannot be rushed. In an age of shortcuts, we chose the long way — rice layered by hand, meat given time in its marinade, pots sealed and left to the quiet work of steam.

We are a new kitchen, and we say so plainly. No invented lineage, no borrowed palace. What we inherit is a method: the Deccan’s patience with fire, its instinct for layering, its refusal to hurry a good thing.

Every biryani we send out is built in order — rice, aromatics, marination, birista, herbs — then sealed and slow-finished on dum, so the aroma arrives before the first spoon does. Our starters come off real heat: char you can taste, smoke you can smell through the lid.

We cook in small batches from Rau, Indore, for people who know the difference between food that is merely fast and food worth the short wait.

This is not nostalgia reproduced. It is Deccani flavour, reinterpreted for today.
