The Zafrani Chicken Dum
Our signature: saffron rice, tender chicken, sealed and slow-finished on dum.

The Menu
A short menu, on purpose. Every dish here earns its place over real fire or under a sealed lid — nothing rides along.
01Dum ✦ The Signatures
Three biryanis, one discipline. Layered in strict order, sealed tight and finished by steam — never a shortcut.
Our signature: saffron rice, tender chicken, sealed and slow-finished on dum.

Crisp-fried chicken pieces buried in spiced rice — texture in every layer.

Slow-cooked mutton, saffron basmati, deep spice — the long way, deliberately.

02Fire ✦ Five Signatures, One Standard
NIZORO's five signature starter experiences, numbered and non-negotiable.

01 — Chicken
Boneless chicken bites tossed glossy in butter and house masala, built for sharing. Choose your temperature — Mehfil for gentle warmth, Jashn for a proper celebration, Junoon when you want the burn to linger.

02 — Chicken
Chicken rested in yoghurt and ground spice, then roasted over fierce heat until the skin blisters and chars. Available whole or half. Smoky at the surface, tender at the bone — no shortcuts in between.

03 — Chicken
Minced chicken worked by hand with green chilli, fresh herbs and warm spice, pressed onto skewers and fired over open flame. Charred outside, juicy through the centre — best eaten too hot to be sensible.

04 — Fish
One of The Five. Fish pressed with a coarse house masala and charred until the crust darkens and grips. Smoky, peppery, a little defiant — while the flesh underneath stays soft and steaming.

05 — Mutton
Tender mutton bites seared hot with cracked black pepper, curry leaf and a dry, clinging masala. Bold and direct — heat that builds rather than shouts. Finishing kitchen trials now; arriving soon.
Dum Has a Dynasty.
03Fire ✦ Chicken
Real heat, honest char. Every piece meets the fire before it meets the box.
Whole or half, char-blistered skin, juices kept honest by real heat.

Buttery, boneless party bites — pick your heat: Mehfil, Jashn or Junoon.

Cream-softened chicken kissed by ember char — gentle, smoky, quietly rich.

Hand-pressed chicken seekh, spiced through and fired over open flame.

House special: ember-roasted chicken folded through a deep, slow rogan gravy.

04Craft ✦ Fish
Tang, smoke and crunch — fish handled with a light hand and a hot flame.
Tangy, fire-licked fish — tamarind sourness sharpened against proper char.

Crisp golden fish fingers, clean-flavoured, made for unapologetic dipping.

Masala-crusted fish charred hard outside, tender and steaming within.

05Craft ✦ Mutton
Mutton rewards patience. Ours gets all the time it asks for.
Mutton simmered patiently in a deep, slow-layered rogan gravy.

Slow-drawn mutton broth — light-bodied, deep-flavoured, quietly restorative.

Black-pepper mutton bites, seared hot — bold, dry-style, unapologetic.

06Sweet Finale
Three ways to finish — saffron, cardamom and slow-stewed apricot.
Saffron-soaked gulab jamun — warm, fragrant, unhurriedly sweet.

Slow-reduced payasam, creamy and cardamom-warm, finished with toasted nuts.

Stewed apricots under cool cream — a bittersweet, amber-bright ending.

Prices will be published at launch. Dishes marked with the brown triangle contain meat or fish; the green dot marks vegetarian preparations.
