Dum is not a mystery, and we will not pretend it is one. It is a discipline: each element prepared on its own terms, layered in strict order, then sealed so that steam — not shortcuts — finishes the work. What follows is exactly what goes into the pot, in the order it goes in.

Why it matters

The goal of dum is separation with harmony — grains that stay long and loose, meat that keeps its own character, aromatics that rise through every layer instead of drowning them. The lid comes off last. Everything before that is patience.
